COCHINITA PIBIL WITH CORN TOAST
Ingredients:

- Cochinita Pibil
- Coarn toast
- Sautéed vegetables
We toasted a corn pancake in the oven and shaped it into a tulip with two molds. We put the pancake upside down on top of one mold and cover it with another mold to give it the shape, and let it cool so that it keeps its shape.
Cochinita Pibil: MICROWAVE: It is not necessary to defrost previously, pierce the top of the container at different points and heat directly in the microwave for about 5 minutes at 800W.
Sauté the vegetables with butter and café de paris type spices, once they are done we will reserve them, but we will use some of them with the sauce for the outer base. Next we will put the tulip with a mixture of cochinita pibil and the rest of the sautéed vegetables.
As the pancake is crispy, we have achieved an excellent combination of textures.
A simple but very nutritious dish.
