At Exquisitarium we have reinvented the concept of patatas bravas, with our brava sauce made with a spicy homemade tomato sauce and mayonnaise, a traditional tapa of our gastronomy but that you can taste in another format, ideal for tapas or accompanying meats. Fry directly from frozen, with plenty of clean, very hot oil at 180ºC until the center reaches 74ºC. Bear in mind that if many potatoes are fried with little oil, the oil cools down and the result will not be optimal. Also, between frying and frying, the 180ºC must be allowed to recover in order to fry correctly again. It is advisable to let it rest for 2 minutes before serving.
