Chicken croquette. Traditional recipe that reminds us of our childhoods. Simple dish perfect for lunch, dinner, an appetizer, or of course, a tapa. Perfect for kids. If you do not have a fryer, a good alternative is to use a sauce pan with enough previously heated oil to cover the croquettes, thus preventing damage from flipping. Let sit a few minutes before serving.
Fry from frozen, in a generous amount of pure, very hot oil at (180°C/350°F) Keep in mind that if you fry a lot of croquettes in a small amount of oil, the oil will cool off and the result will not be ideal. Let it reheat to (180°C/350°F) between croquettes so that they fry properly. Let sit for 2 minutes before serving.
