Step by step: how to prepare the pig’s trotter roll
- Cut and brown the roll
Cut the pig’s trotters roll into slices about 2 cm thick. Brown them in a pan over medium heat on both sides until caramelized and crispy. This step enhances both the flavor and texture.
- Sauté the shrimp
Remove the browned roll from the heat and set it aside on the plate. In the same pan, sauté the peeled shrimp until tender. Place them directly on top of each trotter medallion.
- Finish with aioli and decoration
Add a touch of light, smooth aioli, which blends well with all the ingredients. Garnish with a few drops of parsley oil, which adds freshness and color to the dish
